Holliston's Pejamajo Cafe is going Local

Patrons of Pejamajo Cafe this summer may see some of the food they are about to eat when they pass by local farms. The cafe, which specializes in crepes, is in the midst of a transformation toward using only local, organic ingredients. By Labor Day, owner Peter Savas says he hopes to have made the switch completely.

"The art work of the Miss Studio Artists was displayed at The Pejamajo Cafe.... Visitors to the cafe on Friday evening were treated to the music of Al Cath, a talented guitarist who played recogniizable music, entertaining but not intrusive. The artists mingled with the guests at the cafe, and all enjoyed a fine selection of wine and featured appetizers. Jane Savas, an owner of the cafe plans to host similar galas every week or two, each with different a theme. Photography is on the agenda for next month. The beer and wine lounge is inviting even when there is no featured program."

The Boston Globe reports that some entrepreneurs are braving the economy to start fresh - and Pejamajo Café is one of them!

"If 'know your market' is one of the first commandments of business, then Savas and O'Connell have an advantage as residents of Holliston and as mothers, with 10 children between them. They are well aware of their suburban demographic and are looking at ways to be kid-friendly, by hosting Wii game competitions, for example, on one of the cafe's large plasma televisions, which sat in boxes ready for installation on a recent morning."

"The Pejamajo Café sits at the base of the Barker Lodge Chair, or Sunday River Express, and all the food there is take-out. But the lack of seating doesn’t stop people from lining up for the crêpes, which are folded into a triangle and served in a foil sleeve. The sweet crepes are about $4 and the special crepes about $7. Examples from the sweet menu include: Nutella (with or without bananas), apple-sugar and butter cinnamon brown sugar. Daily specials vary, but one big seller is a sirloin, no-bean chili crepe."

"Once on the mountain, Adam and I made multiple stops at the ski-in, ski-out Pejamajo Cafe. Located right next to Barker Lodge, it serves up sweet and savory crepes and the most amazing vegan chili. Eating the steaming bowl while sitting in the warm sun was a wonderful treat."

"Wow, I had been curious about this place since the week I started my new job in Holliston. I would say this is probably one of the most entertaining things to do in this town. Now, I don't mean that in a bad way because Holliston is actually very quaint and there are a number of other cafe's I have yet to explore.
However, Pejamajo sets the bar. And by bar I mean they have one! If you have nothing to do on a Friday night you can stop in here and enjoy some cocktails and a live band until as late as midnight.
I am really looking forward to trying their crepes and caprese sandwich!"
